What is the difference between dal tadka and dal fry




















Mash a few lentils in between your thumb and forefinger to know if they are really well done and mushy. Sometimes also curry leaves, red chilies, kasuri methi and garam masala are used. The tadka for dal tadka is made with ghee, cumin, garlic, hing, red chilies and chili powder. Sometimes even coriander leaves are used. There is no one right way to make these dishes. So a lot of people also add tadka to just dal fry to transform it to dal tadka. But the tadka is all that makes a huge difference here.

Cook Time 30 minutes. Total Time 35 minutes. Servings 3 people. Author Swasthi. Rinse it well a few times until water runs clear. Pressure cook on a medium heat for 2 to 3 whistles. When the pressure releases, open the lid and mash the dal slightly. Add mustard seeds, cumin seeds and dried red chili. When the spices begin to splutter, add hing.

Next add onions and green chilies. Saute until the onions turn golden. Add ginger garlic and saute until the raw smell of ginger garlic goes off.

Saute on a medium flame until tomatoes turn soft. Add red chili powder, garam masala and turmeric. Pour more water as needed to bring it to a desired consistency.

Cook until the dal begins to bubble well. When dal fry reaches the desired consistency, crush kasuri methi in your palms and add it. Taste test and add more salt if needed. Serve dal fry with rice, roti, butter naan or paratha. When the temperature comes down slightly squeeze in some lemon juice. Saute for 2 mins and then fry ginger garlic for 30 seconds. Add in tomatoes and salt. Saute until the tomatoes turn soft and mushy. Stir in red chilli powder, turmeric and garam masala.

Add rinsed dal and pour 3 cups water. Mix well and scrape the bottom with the spatula to release any bits of food stuck. Optional — You can also place a long legged trivet and then place your rice bowl and cover. This restaurant style Dal Tadka is my absolute favorite. I think I have inherited this from my dad, I really love dal tadka over any other dal.

Sarvesh on the other hand, being a true punjabi loves his dal makhani! Tadka or chaunk in hindi is a term we often use in Indian cooking for the process of adding seasoning to a dish. It mostly involves adding spices like cumin seeds, mustard seeds, garlic, chilies, curry leaves etc. Over the years, I have tried countless variations of dal tadka, both in India and then here in the US.

Some people mix several types of lentils while other stick to only toor dal for the recipe. Some make a tadka of onion only, while others go heavy on spices. As with most Indian recipes, there no right or wrong method or way here. You make it in a way you like it. After a lot of attempts, I have finally zeroed on my favorite version of dal tadka and I am really excited to be sharing this one with you guys.

It just takes a simple dal from good to WOW! What is dhungar method you might ask? Piece of charcoal is heated on direct fire and then placed in a bowl which in then placed inside the dish. The dish adsorbs the smokey flavor in that enclosed environment. The longer you close the lid for, the smokier the dish will become so remember to not over-do it.

I never go beyond 15 minutes. You can use the same method to impart smokey flavor to several other dishes like kadai paneer, panner tikka etc. I hope you guys enjoy this dal tadka recipe, we sure did! Serve it with jeera rice for a perfect meal. Let the pressure release naturally. If using an Instant Pot, cook on high pressure for 8 minutes with natural pressure release. Set it aside.

Meanwhile crush 4 large garlic cloves, 1-inch ginger and green chili in a mortar pestle and set it aside. Once hot, add the cumin seeds, crushed coriander seeds and cloves. Saute few seconds until fragrant. Cover and cook for 7 to 8 minutes until tomatoes are very soft and cooked. Stir the spices with the masala for few 30 seconds. Onion tomato masala is perfect for making dals. You can cut short cooking time considerably if you have prepared masala in your fridge.

This gives dal an authentic dhaba like the taste. Another way is to have double tadka as I have shown in the video recipe of dal tadka. An extra step of Dhungar can take dal to next level by adding a smoky flavour to it. For that heat a piece of coal and place that in a bowl.

Pour a teaspoon of ghee over coal and immediately place this bowl in the cooked dal and cover with a lid of 5 minutes. Dal chawal is one of the best healthy and satisfying meal combinations you can serve tadka Dal Fry with Basmati rice or jeera rice. Dal also tastes best with flatbreads like Garlic Naan, Butter Naan , laccha Paratha , masala paratha or tandoori roti. You can store leftover dal fry in the fridge for days. I mostly make an extra batch.

You can also easily freeze dal makhani. Store it in a ziplock bag or a freezer safe container. You can freeze it upto weeks in freezer.
